HISTORY

Finocchiona PGI stands out among other deli meats for its uniqueness and its unmistakable taste and aroma, given by the flavour of the ingredient that gives its name to this cured meat that can only be produced in Tuscany: fennel seeds and flowers.

Finocchiona PGI is a typical deli meat of the regional tradition of Tuscany and it is linked to its land: a product which originates in the Middle Ages thanks to the ingenuity and knowledge of the countryside and its fruits. Its recipe has crossed the centuries to reach our tables, bringing with it the flavour and taste of the history of Tuscany: since the Middle Ages, when they began to use the seeds and flowers of fennel instead of pepper, then very expensive and rare, the Finocchiona is well-appreciated on tables laden with food. A deli meat of historical tradition known and appreciated since the fifteenth century, which boasts a close link both with the rural tradition and with the noble history of Florence and all of Tuscany.

Product description

Finocchiona PGI is produced exclusively in Tuscany, respecting all the dictates of the Production Rules: meat of certified Italian genealogy obtained from pigs bred in the traditional way.

The ingredients used are those typical of Tuscan charcuterie, which give to an excellent product fresh and intense flavours thanks to the fennel seeds and flowers, to the pepper and the garlic. The taste is spicy and persistent: fennel seeds give the main flavour to the product, which is then followed by pepper and the freshness of garlic. The flavour is given by the salt and quality meats, and the palate is round and soft thanks to the fats that never exceed 35% of the total.

Excellent for snacks with bread and cheese or with vegetables in oil as an appetizer, Finocchiona PGI is surprising for its versatility: it is excellent sliced thinly on freshly baked pizza or to add flavour to the filling of roasted stuffed meats. Finocchiona PGI guarantees the taste of tradition and the fragrance of Tuscany.

Production technique

Finocchiona PGI is prepared by selecting the best certified fresh meats: cuts of neck and shoulder, belly, throat, loin, and leg trimmings are chosen.

These ingredients are chopped into a medium grain to which the ingredients of the traditional recipe such as fennel seeds and/or flowers, salt, pepper and garlic are added. Other ingredients may be optionally added, among which wine stands out.

The mixture is then processed in pieces that can range from a minimum of 0.5 kg to a maximum of 25 kg before being sent to be cured. The curing period of Finocchiona PGI is relatively short: 15, 21 or 45 days depending on the weight. This serves to ensure a product that is soft to chew and has a fresh flavour, with its savoury but never sour taste and intense and unmistakable aroma.
