Cut the red onions into thin slices and put them in a saucepan. Add some olive oil. Put it on a low heat. Halfway through cooking, add a spoonful of honey (alternatively, a spoonful of sugar). Give it a stir and add a pinch of salt.
Then, cut the bread in half and remove the crumb. Cut the cheese into slices and lay them on one half of the bread. Put both slices of bread on the griddle, covering the slice with the cheese with greaseproof paper so that it doesn’t stick to the plate.
Break 3/4 eggs in a bowl and cook them in a non-stick frying pan for a very short time so that they remain soft.
Once the cheese on the bread has completely melted, remove it from the plate and start assembling your sandwich.
Put the eggs first, then the onions and finally the slices of Pancetta di Calabria PDO. Top it with the other half of the bread.
